Black Bean & Corn Salsa

Ingredients

  • 1/4 cup Mayo
  • 2 Tbsp lime juice
  • 1/2 tsp ground cumin
  • 1 can (15 to 19oz) black beans, rinsed and drained
  • 1 can (11oz) whole kernel corn, drained or whole kernel corn w/peppers
  • 1 cup quartered grape tomatoes or cherry tomatoes (halved or quartered)
  • 1/2 cup chopped red onions
  • 2 Tbsp chopped fresh cilantro
  • 1 tsp chopped jalapeno pepper (optional)

Preparation

Step 1

Blend mayo with lime juice and cum in medium bowl. Stir in remaining ingredients. Serve chilled or at room temperature. Serve as a dip with chips or as a side dish with chicken or pork.
