Greek Salad (Elana Lewis)

Ingredients

  • 1 head iceberg lettuce, torn
  • 1 head of chickory lettuce, torn
  • 2 scallions, chopped
  • 1 (6oz) can black olives, drained and pitted
  • 1 (2oz) can anchovies, drained (optional)
  • 2 cucumbers, thinly sliced
  • 2 large tomatoes, chopped
  • 8 oz crumbled feta cheese
  • 1/2 c olive oil
  • 3 T red wine vinegar
  • 1 T dried oregano
  • Salt, pepper

Preparation

Step 1

Combine solid ingredients. Combine oil, vinegar, and oregano in a small bowl. Season to taste with salt and pepper
