CAKE - Raspberry Chocolate Mud Cake

Ingredients

  • For cake:
  • 1 stick unsalted butter
  • 200 g good quality chocolate, melted
  • 3/4 cup sugar
  • 1 cup milk
  • 1 1/2 tsps vanilla essence
  • 2 cups self-raising flour
  • 1 cup cocoa powder
  • 2 eggs
  • 1/2 cup raspberry
  • For Chocolate Ganache:
  • 200 g good quality chocolate
  • 200 ml cream
  • 2 1/2 tbsps sugar

Preparation

Step 1

For cake:
1. Preheat over at 160 degree. Grease pan with parchement paper at the bottom.

2. Cream butter and sugar until light and fluffy. Add in melted chocolate, milk and vanilla essence.

3. Add in sifted flour until combine.

4. Add in sifted cocoa powder.

5. Add in eggs, one at a time, until well blended.

5. Bake for 1 hour or until a cake tester insert comes out clean. Set a side to cool.

For Ganache:
Put chopped chocolate, cream and sugar in pan over medium heat until chocolate melt completely. Pour over cake. let cool for 10 minutes, garnish with raspberries.
