MoM's Buttermilk Banana Cake

This is a dense Banana Cake with terrific Cream Cheese Frosting that has been a family favorite.

Ingredients

  • 3/4 cup Butter
  • 2 1/8 cups Sugar
  • 3 Eggs
  • 2 tsp Vanilla
  • 3 cups Flour
  • 1 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/2 cups Buttermilk
  • 1 tsp Lemon Juice
  • 1 1/2 cups Mashed Ripe Bananas
  • Mini Chocolate Chips Optional

Preparation

Step 1

Preheat oven to 325..Grease and Flour your 9x13 Pan.

(1) In small bowl mix mashed bananas with 1 tsp lemon juice.In med bowl mix dry ingredients flour,soda,salt and set aside also.

(2)In large bowl cream 3/4 cup butter and 2 1/8 cups sugar.Beat well until light and fluffy.Beat in 1 egg at a time and the 2 tsp of vanilla.Beat in flour mixture alternately with the 1 1/2 cups of buttermilk.Hand stir in the banana lemon mixture.Pour into your prepared pan.Bake up to 1 hour or until looks done.

Cream Cheese Frosting

1/2 cup Butter
1 8oz Cream Cheese
3 1/2 cups Powdered Sugar
1 tsp Vanilla

Beat all well till very creamy.Frost this on the cooled cake.
