Joe's Crab Shack-Seafood Stuffing

Ingredients
- 1/4 c butter
- 1/2 bunch celery (trimmed and diced)
- 3 lrg onions, diced
- 1 1/2 tbsp minced garlic
- 1/2 lb pollock fillets
- 1/2 lb salad shrimp, chopped
- 1 oz shrimp or chix base (sub. w/2tsp chix boullion granules)
- 1/4 tsp cayenne pepper
- 1/4 tsp white pepper
- 2 c. unseasoned croutons
- 1/4 c. seasoned bread crumbs
- 1/2 lb crab claw meat

Preparation
Step 1
Saute celery,onion,and garlic in butter until translucent.
Add pollock and cook for 5-7 min
Add shrimp and cook for 2 min
Drain most (but not all) liquid from pan.
Stir in shrimp base and peppers.
Fold in croutons and bread crumbs.
Fold in crab meat.
