Loin Lamb Chops with Mint Pesto

The mint pesto that accompanies these lamb chops is so much healthier than the sugary mint jelly that's often served. Because loin lamb chops are lean and tiny, you'll want two for each serving. They're delicious served with steamed broccoli, Brussels sprouts, or another dark green vegetable.

Ingredients

  • 2/3 cup(s) mint, fresh packed (use leaves)
  • 1/4 cup(s) parsley leaves packed
  • 2 tablespoon nuts, pine nuts or chopped walnuts
  • 1 clove(s) garlic smashed and peeled
  • 1 medium lemon grated zest (use 1/2 teaspoon) plus juiced (use 1 tablespoon)
  • 1 tablespoon oil, olive, extra-virgin
  • 8 whole lamb, loin chops well trimmed (about 1-inch thick)
  • salt to taste
  • peppercorns, black freshly ground, to taste

Step 1

For the pesto:1
In a blender or food processor, process the mint, parsley, nuts, garlic, lemon zest, and lemon juice until finely chopped. With the machine running, drizzle in the oil and process until almost smooth.

For the lamb: 2
Pre-Heat the broiler. Place the chops on a broiler pan. Season lightly with salt and pepper. Broil the chops for 3 minutes per side for medium-rare. Transfer 2 chops to each of 4 plates and top evenly with pesto
