Ingredients

  • For 24 or more servings:
  • 3 hard boiled eggs - separate whites and yolks (crumble whites)
  • 3 T sugar
  • 1-1/2 t dry mustard
  • 3 T cider vinegar
  • 1/2 lb. bacon
  • romaine lettuce - about 2 heads
  • 3 green onions
  • 12 eggs
  • 3/4 cup sugar
  • 6 t dry mustard
  • 3/4 cup cider vinegar
  • 1-1/2 lbs. bacon
  • romaine lettuce - about 6 heads
  • 1 bunch green onions

Preparation

Step 1

Tear romaine lettuce into bight sized pieces and place in salad bowl.

Mash egg yolks and add sugar, mustard and cider vinegar. Stir until smooth.

Fry bacon until crisp. Crumble bacon and reserve drippings.

Drizzle mustard/egg mixture over lettuce.

Drizzle warm bacon drippings over the lettuce.

Garnish with crumbled egg whites, crumbled bacon, and chopped green onions.
