Stir Fry Pepper Beef

Ingredients

  • 8 oz. rib-eye beef
  • 1 Tbsp. salad oil
  • 1 sm. onion, cut into match-size strips
  • 1 stalk of celery, cut into match-size strips
  • 1 sm. deseeded green bell pepper, cut into 1/2-inch strips
  • 1 sm. deseeded red bell pepper, cut into 1/2-inch strips
  • 1 Tbsp. minced fresh garlic
  • 1 b Tbsp. peeled and minced ginger
  • 1/4 c. prepared dashi or chicken stock
  • 1 Tbsp. soy sauce
  • 1 Tbsp. oyster sauce
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water
  • Salt & pepper to taste (there should be sufficient salt from the dashi/soy/oyster sauce)

Preparation

Step 1

Cut rib eye across the grain of the meat into 1/4-inch slices. Then cut the slices with the grain into thin strips. Set aside. Prepare vegetables.

Heat oil in a wok until just smoking. Stir-fry beef, onions and celery for about one minute . Add bell peppers, minced garlic, ginger, dashi, soy sauce and oyster sauce. Continue to cook about three more minutes, being care not to overcook the meat.

Mix water into cornstarch and stir into beef stir-fry to thicken. Add salt and pepper to taste.

Pour pepper beef over noodles or rice.
