- 1 sugar cube
- Peychaud's bitters
- 2 oz Cognac (or Rye Whiskey)
- 1 oz water
- Herbsaint or Absinthe
- lemon peel

Step 1
Fill an old fashion glass with ice and water to chill.
In another old fashion glass put one sugar cube. Soak it with bitters and add 1oz of water.
Muddle until sugar is dissolved. Fill glass with ice and add 2 oz of Cognac (Rye Whiskey can be used). Pour ice water from second glass out and add a few drops of Herbsaint. Roll it around in glass then strain liquid from first glass into glass with Herbsaint. Add a strip of lemon peel and enjoy!
