Cherry Cheese Bars

  • Crust:
  • 1 1/4 Cup Flour
  • 1/2 Cup Brown Sugar, firmly packed
  • 1/2 Cup Butter Flavored Shortening
  • 1 Cup Walnuts, finely chopped
  • 1/2 Cup Coconut
  • Filling:
  • 2 (8 oz.) Pkgs. Cream Cheese, softened
  • 2/3 Cup Sugar
  • 2 Eggs
  • 2 tsp. Vanilla
  • 21 oz. Can Cherry Pie Filling



Step 1

Combine flour and brown sugar. Cut in shortening until fine crumbs form. Coarsely chop 1/2 cup walnut pieces and set aside. Chop remaining walnuts and add to crust. Fold in coconut and mix well. Set aside 1/2 cup mixture. Press remaining crumbs into bottom of greased 9 x 13 inch baking pan. Bake at 350 degrees for 12-15 minutes or until edges are lightly browned. To prepare filling beat together cream cheese, sugar, eggs and vanilla until smooth. Spread over hot, baked crust. Return to oven and bake 15 minutes longer. Spread cheery pie filling over cheese layer. Combine coarsely chopped walnuts and 1/2 cup reserved crumbs. Sprinkle evenly over cherries. Return to oven and bake 15 minutes longer. Cool and refrigerate for several hours before serving.
