large turnips, peeled, ends trimmed, cut into chunks
tsp. kosher salt
water to cover
cup olive oil
cup minced fresh chives
In a large saucepan, add the turnips, salt, sugar, and enough water to cover the turnips. Cover the pan and bring to boiling. cook for 20 minutes, until the turnips are tender. Drain well. Add the turnips to a mixing bowl and beat with electric mixer until smooth, drizzling in the olive oil while beating. Fold in the chives and serve.
