Ingredients

  • 4 Short Ribs
  • 2 - 3 TBS Canola Oil
  • 2 - 3 Cups Beef Stock
  • 1/2 Cup Soy Sauce
  • 1/3 Cup Rice Wine
  • 1 Head Garlic
  • 2 Ounces Ginger
  • 3 Scallions
  • 3 TBSP butter
  • 1 Orange
  • 3 TBSP Hoisin sauce
  • 2 Stalks Lemongrass
  • Salt
  • Pepper
  • 1 TBSP Flour

Preparation

Step 1

Preheat oven to 300 degrees
Heat oil over high heat in dutch over on stove top
Salt, Pepper, and dust short ribs with flour.
Brown short ribs on all sides in dutch oven
Remove ribs
Add lemon grass, ginger, scallions, garlic and saute for 2 minutes over med-hi heat
De-glaze with rice wine
Add soy, hoisin, juice and yest of orange, and 1/2 of the beef stock and bring to a boil
Place short ribs back into dutch oven
Add beef stock until ribs are almost covered in liquid
Cover and stick in over for 3 1/2 hours
Remove short ribs
Strain sauce, remove fat, and return to heat.
Add 3 TBSP of butter to sauce and
thicken.
Add back to sauce and heat through just before servicing
