  • 2/3 c. butter (NOT margarine!)
  • 1/2 c. sugar
  • 1/3 c. water
  • 1/2 t. salt
  • 2/3 c. blanched almonds
  • 1/4 t. baking soda’
  • 8 oz. dipping chocolate
  • 1 cup chopped almonds

Step 1

Combine ingredients 1-4 in a saucepan.
Cook over low heat, stirring constantly until it boils, then…
Cook without stirring until 236 degrees (soft-ball stage). Add blanched almonds and cook until soft crack stage…290 degrees…stirring constantly. Remove from heat and stir in baking soda. Pour onto a well greased baking sheet and spread to ¼” thickness. Allow to cool.
Melt the dipping chocolate, and spread ½ over candy. Press into this ½ c. of chopped almonds. Allow to cool.
Turn candy over and repeat chocolate and nuts on the other side. Allow to cool. Break into pieces.

Do not double the recipe…..just repeat it if you must.
