Ingredients

  • 1/2 Tbsp Vegetable Oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1/2 tsp cumin
  • 2 cloves garlic, minced
  • 3 cups shredded chicken
  • 1.5 cups reduced fat colby-jack cheese
  • 1/3 cup light sour cream
  • 1 (4oz) can chopped green chilis
  • 6 whole-wheat tortillas (8inch)
  • 1 cup jarred salsa verde
  • 1/2 cup chopped fresh cilantro

Preparation

Step 1

1. Preheat oven to 350C

2. Heat oil in large skillet and cook onion, bell pepper, & cumin until cooked (about 4 minutes).

3. Add garlic, cook for 1 minute.

4. Mix together vegetable mixture, chicken, 1 cup cheese, sour cream, and chilis in a large bowl.

5. Spoon chicken mixture evenly onto tortillas and roll up.

6. Arrange tortillas, seam side down, onto baking dish sprayed with cooking spray.

7. Pour salsa over enchiladas and sprinkle with remaining 1/2 cup of cheese.

8. Cover and back for 30 minutes. Then uncover and bake another 10 minutes.

9. Sprinkle with cilantro before serving.
