Ingredients
- 8 slices of bacon
- 1 onion, diced
- 1 green pepper, diced
- 3/4 cup of barbeque sauce
- 3 large cans (28 oz.) pork and beans
- 1/2 cup brown sugar
- 1/4 cup white or cider vinegar
- 2 tsp. dry mustard
- 2 tbsp. mustard
Preparation
Step 1
Cut bacon slices in half. Fry on medium low heat. Do not brown or crisp the bacon at all; the point is only to render the fat and get the bacon pieces ready to bake up and turn brown in the oven. Remove the bacon pieces once the fat is rendered. Do not pour out the grease.
Dice up an onion, and a green pepper.
Measure 3/4 cup of your favorite bbq sauce. Pour it into bowl, and add 1/2 cup brown sugar. Add 1/4 cup vinegar.
Finally, add a couple of tbsp. mustard and mix the whole thing together.
Now. Back to the skillet. You can pour off a little grease, but leave some in for good measure.
Put the skillet over medium heat, then throw in the onions and green peppers.
Stir and cook for a few minutes, until tender.
Pour in 3 cans of pork and beans.
Stir it together, then pour in the bbq sauce/brown sugar mixture.
Bring this all to a simmer. Add jalapeno, if you like spicy.
Pour it into a large casserole pan.
Put half cooked bacon all over top.
Key: bake this low and slow 325 degrees for 2 hours. You want the beans to be very very brown, and no soupiness to the dish whatsoever. 13x9in pan.
