  • 1 pound ground beef
  • 1-1/2 cups water
  • 1 (14.5) can diced tomatoes
  • 1 can whole kernel corn
  • 1 - (4,4) envelope Spanish rice mix
  • 6 ounce (1-1/2 cups)shredded Mexican cheese blend

Preparation

Step 1

Brown ground beef in large skillet over medium high heat until thoroughly cooked, stirring frequently.

Add water, tomatoes, corn and rice mix; mix well. Reduced heat to low; cover cool 10-15 minutes or until rice tender.

Stir in 1 cup of the cheese melted. Sprinkle with remaining cheese.
