Crunchy Top Cauliflower

Ingredients

  • 1 can diced tomatoes with herbs and spices
  • 1 head cauliflower
  • 1/2 tsp salt and pepper
  • 3/4 cup bread crumbs
  • 2 tbsp parmesean cheese
  • 2 tbsp butter melted
  • 1 tbsp parsley

Preparation

Step 1

1. Drain tomatoes
2. In a large skillet bring tomatoes to simmer of medium high heat. Add cauliflower, salt & pepper
3. Cover and simmer till tender, about 20 minutes
4. In bowl combine bread crumbs, cheese, butter and parsley. Sprinkle on cauliflower
5. Broil for 2 minutes until golden brown.
