Ingredients

  • 2 cups heavy whipping cream (I used a container of cool whip)
  • 1 cup creamy natural peanut butter
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup milk chocolate chips

Preparation

Step 1

In the bowl of a stand up mixer fitted with a whisk attachment add heavy whipping cream, Beat until soft peaks form about 4 minutes..( I skipped this step) Add peanut butter ( I just added the peanut butter and the cool whip into my mixer) and beat for about 1-2 minutes..Gradually add sugar and vanilla and continue being until stiff peaks form, another 2-3 minutes..Divide between 4 mason jars ( used the short jelly jars)
In a medium saucepan, add 2 inches of water and bring to a boil. Set a medium bowl with chocolate chips over the saucepan and allow to melt, about 5 minutes , stirring frequently. Allow to cool slightly.
Top each mason jar with a layer of chocolate. Refrigerate until ready to serve
( tip: build extra mousse cups and keep them in the freezer until ready to eat
Use the whipped peanut butter mixture on top of hot chocolate)
