Ingredients
- 1 lb brussell sprouts halved
- 1 lb butternut squash cut into pieces
- 1/2 med onion, chopped
- 1 lemon thinly sliced
- 3 garlic cloves, minced
- 2 T olive oil, 2 T balsamic vinegar
- salt pepper
- 4 chicken thighs
- 2 T olive oil
- 1 T apple cider vinegar
- 1 t fennel seeds
- 1 t crushed red pepper
- 1 t paprika
- 1 t garlic powder
- salt, pepper, 4 sage leaves chopped
Preparation
Step 1
oven set to 450 degrees. combine sprouts, squash, onion, lemon slices and garlic in bowl, and add oil, balsamic, salt, pepper and nutmeg. toss to combine and spread veggies on large baking sheet.
combine olive oil, apple cider vinegar, red pepper, paprika, garlic power, salt and pepper, and sage in small bowl. coat chicken with mixture and place on town of veggie mixture.
bake 30-40 min till veggies and chicken are cooked.
