Ingredients
- 1 Onion
- 1 Green Pepper
- 2 Cloves Garlic
- 1 Large Baking Potato, About 10 oz.
- 2 Tablespoons Oil
- 1 1/4 lbs. Ground Beef
- 1/2 Tablespoon Pepper
- 1/4 Cup Barbecue Sauce
- 1 Tablespoon Chopped Parsley

Step 1
Chop the onion and green pepper. Mince the garlic. Peel the potato and cut into 1/4" dice. Cook the potato in boiling salted water until tender, 5 to 10 minutes, drain and put in a bowl. In a medium nonstick or well-seasoned frying pan, heat the oil, add the onion, green pepper and 1 tablespoon of water, cover and cook until softened, about 5 minutes. Add the garlic and cook, uncovered 1 minute longer. Add the potatoes, beef, salt and pepper and cook over medium heat, stirring occasionally, until the beef browns, about 10 minutes. Stir in the barbecue sauce. Sprinkle with parsley and serve with barbecue sauce if you like.
