Lunch Box Muffins

Ingredients

  • 1 1/2 C brocoli, finely chopped
  • 1 1/2 C chopped cooked ham
  • 1 medium onion, chopped
  • 1/2 C grated Parmesan cheese
  • 6 eggs
  • 1/2 C vegetalbe oil
  • 1 1/4 C flour
  • 1 T baking powder
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/4 tsp thyme
  • 1/2 tsp garlic powder

Preparation

Step 1

Preheat oven to 375.

Cool broccoli until tneder crisp. In large bowl, combine froccoli, ham, onion and cheese. In another bowl beat eggs until foamy. Blend in oil. Add dry ingredients. Beat until smooth. Stir in broccoli mixture until just blended. Spoon into greased muffin tins. Bake 20 - 25 minutes.
