Ingredients

  • Dried Fruit Variation, add when adding bran mixture to flour mixture:
  • 1 C buttermilk
  • 1 C natural wheat bran
  • 1 1/4 C flour
  • 1/4 C brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg, fork-beaten
  • 1/4 C cooking oil
  • 1/4 C fancy (mild) molasses
  • 1 tsp vanilla
  • 1/2 C chopped dried fruit
  • 1/2 C chopped nuts

Preparation

Step 1

Stir buttermilk into bran in medium bowl. Let stand ffor 10 minutes.

Measure next 5 ingredients into large bowl. Stir. Make a well.

Stir remaining 4 ingredients into bran mixture. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.

Bake in 375 oven for 20 - 22 minutes until pick comes out clean. Let stand in pan for 5 minutes before removing to wire rack.
