Kale Breakfast Casserole

Ingredients

  • Lg. red onion, diced
  • 2 tsp. olive oil
  • 1 red bell pepper, diced
  • 1 C. mushrooms, sliced
  • 2 C. kale, chopped
  • 1 tsp. dried thyme
  • 10 eggs
  • 1/4 C. skim milk
  • 2 C. shredded cheese
  • 1/2 tsp. black pepper

Preparation

Step 1

Preheat oven to 375.

Heat the oil and cook the onions over low heat for 6-8 minutes.

Add the bell pepper, mushrooms and kale, and cook for 3-4 minutes.

Stir in the thyme. Remove from heat and allow to cool.

Whisk the eggs. Add the milk and cheese, and mix well. Season with black pepper.

Mix the vegetables with the eggs, and pour everything into a greased casserole dish.

Bake uncovered for 35 minutes.
