Jambuster Muffins

Ingredients

  • 2 C flour
  • 1 C oats
  • 1/2 C brown sugar
  • 1 T baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 C milk
  • 1/4 C cooking oil
  • 1/2 C seedless raspberry jam

Preparation

Step 1

Measure first 6 ingredients. Stir. Make well.

Combine next 3 ingredients and add to well. Stir just til moistened. Fill 12 greased muffin cups 1/2 full. Make a small indent. Spoon 2 tsp jam in each dent. Top with remaining batter.

Bake in 375 oven for 18 - 20 minutes until firm to touch. Let stand in pan 5 minutes before removing to wire rack.
