Seared Sesame Tuna with Ginger Soy Vinaigrette & Sauteed Mustard Greens

Ingredients

  • 1/4 Cup Red wine vinegar
  • ◾1/4 Cup Chicken broth
  • ◾2 Tbl Sherry or white wine
  • ◾1 Tbl Ginger
  • minced
  • ◾1 Tbl Soy sauce
  • ◾1 Tbl Sugar
  • ◾1 Tbl Garlic
  • minced
  • ◾1/2 Lemon
  • juiced
  • ◾1 Scallion
  • sliced diagonally
  • ◾As Needed Hot chile sesame oil
  • or toasted sesame oil
  • ◾2 Tbl Vegetable oil
  • ◾1 Tbl Black sesame seeds
  • ◾2 Tuna steaks (6 oz)
  • seasoned
  • ◾10 Oz Mustard greens
  • stemmed & chopped
  • ◾2 Cloves Garlic
  • sliced
  • ◾As Needed Salt
  • ◾As Needed Ground pepper

Preparation

Step 1

Vinaigrette: Combine the first 8 ingredients in a sauté pan over medium high heat until it is reduced to 1/4 cup (about 5 to 8 minutes). Keep warm over low heat.

Tuna: Combine black and white seeds, coat only one side of the fish. Sear seed side down for 3 to 4 minutes. Turn over and cook for an additional 2 to 3 minutes.

Greens: Sauté garlic in olive oil for 1 minute. Add greens and sauté until wilted, about 2 to 3 minutes. Season with salt and pepper.

Assembly: Add scallions and sesame oil to warm vinaigrette. Top fish with greens and then vinaigrette. Serve.
