Seared Sesame Tuna with Ginger Soy Vinaigrette & Sauteed Mustard Greens

Ingredients
- 1/4 Cup Red wine vinegar
- ◾1/4 Cup Chicken broth
- ◾2 Tbl Sherry or white wine
- ◾1 Tbl Ginger
- minced
- ◾1 Tbl Soy sauce
- ◾1 Tbl Sugar
- ◾1 Tbl Garlic
- minced
- ◾1/2 Lemon
- juiced
- ◾1 Scallion
- sliced diagonally
- ◾As Needed Hot chile sesame oil
- or toasted sesame oil
- ◾2 Tbl Vegetable oil
- ◾1 Tbl Black sesame seeds
- ◾2 Tuna steaks (6 oz)
- seasoned
- ◾10 Oz Mustard greens
- stemmed & chopped
- ◾2 Cloves Garlic
- sliced
- ◾As Needed Salt
- ◾As Needed Ground pepper

Preparation
Step 1
Vinaigrette: Combine the first 8 ingredients in a sauté pan over medium high heat until it is reduced to 1/4 cup (about 5 to 8 minutes). Keep warm over low heat.
Tuna: Combine black and white seeds, coat only one side of the fish. Sear seed side down for 3 to 4 minutes. Turn over and cook for an additional 2 to 3 minutes.
Greens: Sauté garlic in olive oil for 1 minute. Add greens and sauté until wilted, about 2 to 3 minutes. Season with salt and pepper.
Assembly: Add scallions and sesame oil to warm vinaigrette. Top fish with greens and then vinaigrette. Serve.
