  • 7 eggs separated
  • 1 c sugar
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp rum
  • 1/2 lbs butter nuts-ground



Step 1

Beat yolks, adding sugar, flour, salt, cinnamon, nutmeg, and rum. Add ground butter nuts, beating well into mixture. Beat egg whites till they form peaks. Mix a quarter or beaten whites into batter, then add batter into bowl of remaining whites. Pour into greased pan and bake at 325 for an hour. Let cake cool, turn out on rack. Serve with whipped cream.
