Sides (Sugar Snap Pea & Salami Stir Fry)

Ingredients

  • 2-1/2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons cornstarch
  • 2 teaspoons honey
  • 6 ounces salami slices, cut into strips
  • 2 bunches scallions, cut into 1-inch pieces
  • 1/4 cup finely chopped fresh ginger (about 1 ounce)
  • 2 cloves garlic, thinly sliced
  • 1 pound sugar snap peas, trimmed

Preparation

Step 1

1)In a medium bowl, whisk together the soy sauce, oyster sauce, cornstarch and honey; whisk in 1 cup water. In a large skillet, cook the salami over medium heat until crisp, about 4 minutes. Stir in the scallions, ginger and garlic and cook for 1 minute more.

2)Whisk the liquid ingredients again, then add to the skillet along with the sugar snap peas. Increase the heat to high and cook, stirring, until the sauce thickens, 2 to 3 minutes.
