Sides (Sesame Pork Fried Rice)

Ingredients

  • 1 (7oz) box instant rice,Minute Rice
  • 1 Lb boneless center-cut loin pork chops,cut into bite-size pieces
  • 1 1/2 Tsp minced garlic,divided
  • 1 Tsp ground ginger,divided
  • 2 Tbsp sesame oil,divided
  • 3 Tbsp soy sauce
  • 2 Tbsp hoisin sauce
  • 2 Tbsp rice vinegar
  • 4 large eggs lightly beaten
  • 1 Cup shredded lettuce
  • 1 Tbsp sesame seeds
  • Garnish:diagonally sliced green onions

Preparation

Step 1

1)Prepare rice according to package directions. Let stand 5 minutes to cool. Cover and chill at least 2 hours.

2)In a medium bowl,toss together pork,1/2 Tsp garlic and 1/2 Tsp ginger.

3)In a large skillet or wok,heat 1 Tbsp oil over medium-high heat. Add pork mixture,stir-fry for 3 minutes,or until done. Remove from pan;keep warm.

4)Heat remaining 1 Tbsp oil in skillet over medium-high heat,add remaining 1 Tsp garlic and 1/2 Tsp ginger;stir-fry for 30 seconds. Stir in cold rice,soy sauce,hoisin sauce and vinegar;stir-fry for 2 minutes. Add pork mixture and stir-fry for 2 minutes,or until thoroughly heated. Make a well in center of rice mixture;add eggs and scramble for 1 minute,or until set. Stir in lettuce. Sprinkle with sesame seeds. Garnish with green onions,if desired.
