Ingredients

  • 6 FLOUR TORTILLAS,7 Inches in diameter
  • 2 teaspoons olive oil
  • 1 medium size yellow onion, finely chopped (1cup)
  • 1 medium size sweet red pepper,cored,seeded,and diced(3/4 cup)1 1/4 pounds ground turkey
  • 1/4 teaspoon salt
  • 2 cloves of garlic, mixed
  • 1 teaspoon each ground cumin, chili powder, and dried oregano, crumbed
  • 1 jalapeno pepper seeded and finely chopped (1 tablespoon)
  • 1/2 cup tomato sauce
  • 2 tablespoons minced fresh cilantro
  • 1/2 cup jack cheese (2 ounces)
  • 1 cup salsa

Preparation

Step 1

1. Preheat the oven 350 F. Wrap the tortillas in aluminum foil and heat them in oven for 8 minutes Meanwhile, in a 12 inch nonstick skillet. Heat the oil over moderate heat. Add the onions and red pepper and sauté stirring occasionally, for 5 minutes or until the onions is soft.
2. Add the turkey and salt to the skillet and saute,stirring for 3 minutes or until the turkey is no longer pink. Add the garlic,cumin,chili powder,oregano,and if desired the jalapeno pepper,saute,stirring,for 1 minute or until the mixture is dry, Stir in the tomato sauce and cilantro.
3. Increase the oven temperature to 450 F. Unwrap the tortillas and place them on greased baking sheets. Spread an equal amount t of the turkey mixture on each one and sprinkle with the cheese, Bake for 8 to 10 minutes or until cheese is melted and the tortillas are golden Serve with Salsa if desired. Accompany with salad of avocado and tomatoes Serves 6
