Roasted Red Pepper Pita Pizzas

Ingredients

  • 12 oz jar roasted red peppers
  • 1 jar oil packed sun dried tomatoes4 whole grain pitas
  • 1 1/3 cups shredded jack cheese
  • 2 tsp dried oregano
  • Pinck of kosher salt

Preparation

Step 1

* Place pizza stone in oven; preheat to 450 degrees
* Drain red peppers, remove 1/2 of a pepper cut into thin strips for garnish
* In a food processor, add red peppers, 10 sundered tomatoes w/ 1 Tbsp of the oil;
puree for 2 minutes, until smooth
* On each pita spread sauce, then cheese, garnish w/ red pepper, oregano, pinch of salt
* Place pizzas on stone, bake for 5 - 7 minutes
