Ingredients
- 3/4 cup sugar
- 1 1/2 cups fresh lime juice (12-14 limes)
- 1 tsp grated lime zest
- 3 cups water

Step 1
1. In a small saucepan, combine sugar with 3 cups water. Bring to a boil. Reduce heat and simmer for 5 minutes. Cool and Chill in refrigerator for 1 hour.
2. Stir in lime juice and zest. Pour the mixture into a shallow metal cake pan and place in freezer. When the mix forms a frozen top layer, take a fork and scrape through the granita. Place back in freezer until next frozen top layer appears. Again scrape fork through the granita. Continue until all of the mixture is frozen. Use fork to get a snowy consistency and serve.
