  • 1 # whole wheat pasta
  • 1 bunch spinach, 6 - 8 cups
  • 6 TBSP unsalted butter
  • 1 1/2 cups grated parmesan cheese
  • 3/4 tsp kosher salt
  • 1 tsp ground black pepper

Preparation

Step 1

* Cook the pasta; drain but set aside 2 cups of the pasta water
* Add 1/2 cup pasta water in pot; boil; add spinach, cook for 60 seconds
* Add pasta, mix well
* Add butter, parmesan, salt and pepper, add very small amounts of remaining water
until the desired consistency
