Lemon Chicken with Mushroom Sauce

Ingredients

  • 1 tbs olive oil
  • boneless chicken breasts
  • 1 lemon
  • 3 c fresh sliced mushrooms
  • 2 tbs flour
  • 1/2 C chicken broth (or more as needed)
  • chopped fresh parsley

Preparation

Step 1

Preheat oven to 400 degrees
Pour olive oil in an 8x8 glass baking dish. Place the chicken in the dish, coating each side with oil. Squeeze the juice of 1/2 lemon over chick,e. Slice the rest and place lemon slice on top of chicken.
Bake until no longer pink in the center. About 30-40 minutes
Melt butter in skillet over medium heat. Add mushrooms. Cook and stir until mushrooms are brow and liquid is evaporated., about 6 minutes. Sprinkle flour over mushrooms and stir until coated. Add broth, stirring to make a medium thick sauce. Allow sauce to reduce, adjusting with more broth as needed.
Spoon sauce over baked chicken
Sprinkle with parsley
