White Chocolate Strawberry Brownies

Boy, do I have a decadently delightful recipe to share with you all today. I grabbed my standard brownie recipe (which is rich with fudgy goodness), spread a fantastic white chocolate frosting over them, then layered fresh strawberries on top with a drizzle of milk chocolate. They are so good, gang. Truly. They would be wonderful served at a baby or wedding shower, as the finale to a fantastic meal or just to made totake along to a pot luck. (Or you could make some for your mama for mothers day…I bet she would love them!)

Ingredients
- BROWNIES:
- 1 C butter
- 2 C sugar
- 1/2 C cocoa powder
- 2 tsp vanilla
- 4 eggs
- 1 1/2 C flour
- 1/2 tsp salt
- 3/4 C semi sweet chocolate chips
- WHITE CHOCOLATE FROSTING:
- 1 (8 ounce) package cream cheese, softened
- 1/2 C butter, softened
- 1/2 C white chocolate chips, melted
- 4 C powdered sugar
- 2 tsp vanilla
- 1 Tb whipping cream or half and half
- dash salt
- TOPPINGS:
- 1 1/2 pounds fresh strawberries
- 1/2 C milk chocolate chips
Preparation
Step 1
1. Preheat your oven to 350 degrees.
2. Melt the butter in the microwave and pour it into your stand mixer.
3. Add the sugar and cocoa powder and beat until smooth.
4. Add the eggs one at a time, beating after each one. Add the vanilla.
5. In a separate bowl combine the flour and salt. Add it to the wet ingredients and mix until combined.
6. Add the chocolate chips and stir to incorporate. Spread the batter into a 9x13 pan that has been sprayed with cooking spray.
7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the brownies to cool completely.
9. To make the frosting, beat the softened cream cheese and softened butter together in your stand mixer.
10. Melt the white chocolate in the microwave in 30 second increments until smooth. Add it to the mixer. Now don't be alarmed if it seems a little bit clumpy. It will smooth out for you. Mix it on medium speed for about 2 minutes.
11. Add the powdered sugar, vanilla, whipping cream and salt. Mix until smooth. Spread it over the top of the cooled brownies. Refrigerate to set.
12. Just before serving, cut the brownies and place them on a serving tray or individual serving plates. Slice the fresh berries and place them on top of each brownie.
13. Melt the milk chocolate in the microwave in 30 second increments, stirring after each one. Drizzle the chocolate over the berries.
Serve and enjoy! The brownies and frosting will freeze well. However, they will only last about 24 hours once the berries and chocolate are added.
