Slice and Bake Shorbread Cookies

Easy variations:
Add 1/2 c chopped dried cranberries an 1 tbs orange zest.
Omit almond extract. Stir in 1 c pecans, chopped.
Omit almond extract. Stir in 1 cup mini semi-sweet chocolate chips.
Logs can be frozen. Let stand at room temperature 10-15 minutes before baking.

Ingredients
- 1 c butter, softened
- 1/4 c powdered sugar
- 2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 c all purpose flour
- 1/4 tsp baking powder
- 1/8 tsp salt
- wax paper
Preparation
Step 1
Beat butter at low speed with electric mixer until creamy.
Add other ingredients one at a time.
Shape dough into 2 logs. Wrap in wax paper and chill 4 hours.
Preheat oven to 350*
Place 1 inch apart on a lightly greased cookie sheet. Bake for 10-12 minutes. Cool completely and place in airtight container.
