Ingredients
- cooking spray
- 1 C unsalted chicken stock
- 1/4 C dry white wine
- 3 TBL all-purpose flour
- 2 TBL unsalted butter, melted & cooled
- 2 TBL fresh lemon juice, divided
- 6 skin-on, bone-in chicken thighs (abt 1 1/2 lbs)
- 1 3/4 tsp kosher salt, divided
- 1/2 tsp freshly ground black pepper, divided
- 1 1/2 lbs sm. red potatoes, scrubbed
- 40 garlic cloves, peeled
- 12 fresh thyme sprigs3 TBL chopped fresh parsley
Preparation
Step 1
1. coat bottom & sides of 6- qtr slow cooker w/ cooking spray
2. combine stock, wine, flour, butter & 1 TBL lemon juice in med. bowl, stirring w/ whisk; pour mixture into slow cooker. sprinkle chicken thighs evenly with 1/4 tsp salt & 1/4 tsp pepper. Place thighs in slow cooker, skin side down. arrange potatoes, garlic & thyme over chicken in slow cooker. sprinkle 1/2 tsp salt & 1/4 tsp pepper evenly over garlic & potatoes. cook on LOW FOR 8 hours.
3. transfer chicken to a platter. transfer potatoes & garlic to platter w/ slotted spoon; discard thyme sprigs. sprinkle chicken & potatoes evenly w/ remaining 1/2 tsp salt, remaining 1 TBL lemon juice, & parsley. serve jus w/ chicken, potatoes & garlic cloves
