Ingredients

  • Cornbread:

  • 1/2

    cup cornmeal

  • 2/3

    cup flour

  • 3

    TBS sugar

  • 1

    TBS baking powder

  • 1/4

    tsp salt

  • 3 to 4

    TBS oil

  • 1/3

    cup milk

  • 1

    egg

  • 1

    can (4.5 oz) diced green chiles

  • 1

    can corn or creamed corn

  • Meat:

  • 1

    lb ground beef

  • 1

    tsp cumin

  • 1

    tsp chili powder

  • 1/4

    tsp salt

  • 1/4

    tsp pepper

  • Pie:

  • 1 1/4

    cup enchilada sauce

  • 2

    cups shredded cheese

Directions

1) Preheat oven to 400 degrees F. Grease baking pan (9×9, 9×13 or lrg cast iron skillet). 2) Whisk together cornmeal, flour, sugar, baking powder and salt. Add oil until soft crumbles form. Whisk in milk and egg. Gently fold in chiles and corn. Pour into prepared pan. Bake until set (a toothpick should come out clean), about 20 – 25 mins. 3) While cornbread is baking, combine beef and spices and sauté in a skillet over med heat until fully cooked, about 10 mins. Drain and set aside. 4) Once cornbread is done baking, reduce oven to 350 degrees F. Poke holes in cornbread with a fork and pour enchilada sauce over it. Top with ground beef mixture and shredded cheese. Cover with foil and bake 20 mins. Remove foil and put back in oven until cheese begins to brown, about 5 – 10 mins. 5) Let cool 10 – 15 mins before serving with desired toppings (salsa, guacamole, sour cream, extra cheese, cilantro, lime wedges).
