Caesar Butterflies Pasta/Lettuce Salad

Ingredients

  • 1/3 cup red wine vinegar
  • 2 tsp Dijon mustard
  • 1 clove garlic, minced
  • Pinch of sugar
  • Sea Salt
  • 1/2 cup olive oil
  • Fresh ground pepper
  • 1/2 lb Butterfly/Bow tie pasta (Cooked al dente)
  • 8 cups mixed salad greens
  • 2 cups cucumbers
  • 1 cup chopped walnuts
  • 2 oz fresh Parmesan cheese

Preparation

Step 1

Prepare dressing; in a small bowl whisk vinegar, mustard, garlic, sugar and salt. Slowly drizzle in oil whisking constantly until slightly thickened. Season with pepper

Place cooked pasta in large bow; and toss with 3 tbsp dressing

Before serving add salad greens, cucumbers and walnuts. Toss with 4 tbsp dressing.

Shave thin slices of Parmesan on top of salad.
