Ingredients
- Almond-Orange Dressing:
- 1 (15-ounce) can pear halves in extra-light syrup
- 3 ounces goat cheese
- 2 tbsp vanilla-flavored almond milk
- 2 tbsp slivered almonds, roasted
- 20 raspberries
- 4 cups arugula or mixed greens
- 1/4 cup slivered almonds, roasted
- 1 small garlic clove
- 1/4 tsp salt
- Zest and juice of 1/2 orange
- 1/4 cup extra-virgin olive oil
Preparation
Step 1
Drain pear halves and pat dry. Place cored side up on a work surface. Stir together goat cheese, almond milk and slivered almonds in a small bowl. Divide this mixture among pear halves, dolloping inside and on top. Top each pear half with four raspberries.
Almond-Orange Dressing:
Combine all ingredients in a blender or food processor until smooth and creamy. Makes about 1/2 cup.
Divide greens among four or five salad plates; drizzle with Almond-Orange Dressing. Place a stuffed pear half on top of each pile of dressed greens. (One pear half will be left over).
