Avocado Stuffed Onion Rings

Ingredients

  • 3 ripe Avocados
  • 1 lime
  • 1 tomato, diced, drained of excess water
  • 1/4 cup fresh cilantro, minced
  • 2 cloves garlic, minced
  • 1 teas salt
  • 1/2 teas chili powder
  • 2 medium size yellow onion
  • flour
  • 2 eggs beaten
  • 2 cups Panko bread crumbs
  • oil for frying

Preparation

Step 1

Mash Avocados with juice of lime. Mix in chopped tomato, cilantro, garlic, salt & chili powder. Cut onion into 1/2 inch slices. Carefully separate the layers into individual rings on a wax paper lined tray. Layout onion rings & fill each with guacamole. Place try in the freezer until solid about 1 hour.

Put flour, beaten eggs & bread crumbs in three separate bowls. Remove frozen onion rings, roll each in flour, egg, then bread crumbs. Coat once more in the egg and bread crumbs.

In a large saucepan heat oil to 350. Fry rings in batches until nicely browned on all sides. Place on paper towel lined plates to drain off excess oil. Sprinkle with salt and lime juice.

Serve with sour cream.
