Chicken-broccoli Casserole

Ingredients

  • 6 c bite-size broc florets (& stems, peeled)
  • 1 1/2 c cooked chicken (bite-size)
  • 1/4 c diced, drained, jarred red pepper (patted dry)
  • 3 T + 2 T butter
  • 3 T flour
  • 1 1/2 c milk
  • 1 c chick broth
  • Pinch nutmeg
  • 1/2 t coarse salt
  • 1/8 t blk pepper
  • 1 c (4 oz) shredded sharp cheddar cheese
  • 1 c fresh breadcrumbs

Preparation

Step 1

425˚ oven
Coat 10" gratin dish with cooking spray
Steam broccoli
Place in gratin dish, top with chick & red pepper
In med saucepan, melt 3 T butter over med heat. Add flour, cook 1 minute, whisking constantly. Add milk & broth, cook, whisking 2 minutes until boils. Reduce heat to simmer, whisk 2 more minutes. Stir in nutmeg, salt & pepper. Remove from heat, stir in cheese, pour over broc, chick & red peps.
In small skillet, melt remaining butter, add bread crumbs & mix. Sprinkle over. Bake 10 min until bubbling hot.
