Ingredients
- 2 celery ribs
- 1 yellow pepper
- 1 red pepper
- 1/2 medium onion
- 4 (15 oz) cans black eyed peas, rinsed and drained
- 2 jalapeno peppers, seeded and diced
- 2 tbs parsley, fresh, chopped
- a clove garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp ground cumin
- 1/2 c red wine vinegar
- 2 tbs balsamic vinegar
- 1/4 c evoo
- 4 bacon slices. cooked and crumbled
Preparation
Step 1
Dice first 4 ingredients. Combine diced vegetables, peas and next 6 ingredients.
Combine vinegars and whisk inevoo slowly.
add to pea mix and toss gently to coat. Cover and chill 3-4 hours.
garnish with bacon when ready to serve.
