Ingredients
- 1/2 c. Natural Peanut Butter
- 1/2 c. Chicken Broth
- 2 tbsp soy sauce
- 2 tbsp Liquid Honey
- 1 tbsp fresh lime zest
- 2 tbsp fresh lime juice
- 2 tsp Sensations by Compliments Chili Pepper Seasoning Paste
- 4 boneless, skinless chicken breasts
- 1/4 tsp salt and pepper
- Lime wedges and finely diced red bell pepper, for garnish
Preparation
Step 1
1.Whisk together peanut butter, broth, soy sauce, honey, lime zest, lime juice and chilli paste in a bowl until smooth; set aside. Reserve 1/3 cup (75 mL) of marinade for later use. Place chicken in a shallow dish; coat well with remaining marinade, wrap and refrigerate for at least 30 min.
2.Preheat oven to 425°F (220°C). Remove chicken from fridge, discard used marinade and set chicken breasts in an oiled or parchment-paper-lined pan. Pour reserved marinade over chicken, season with salt and pepper and roast in the oven for 10 min.
3.Reduce oven to 375°F (190°C) and continue roasting chicken to an internal temperature of 170°F (77°C), about 10 to 15 min. Allow to rest for 5 min., garnish and serve.
