Ingredients

  • 8 ounces mini penne pasta or macaroni
  • 6 to 8 slices bacon, diced and cooked until done but not crisp
  • 2 cups diced cooked chicken breast (about 2 to 3 chicken breast halves), cooked
  • 1/2 cup finely chopped red onion
  • 2 plum tomatoes, seeds removed, diced
  • 2 ribs celery, diced
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper, or to taste
  • salt, to taste
  • 1/2 to 3/4 cup mayonnaise
  • juice of 1/2 lemon -- mixe lemon juice with the mayo before adding.

Preparation

Step 1

Cook pasta following package directions; drain in a colander and rinse under cold water.
In a large bowl, combine the diced bacon, chicken, red onion, tomatoes, celery, and parsley. Toss to blend the ingredients. Stir in 1/2 cup of mayonnaise and the lemon juice. Stir in the garlic powder, pepper, and salt, to taste.
