Weight Loss Soup

Ingredients

  • 2 pounds ground beef, chicken breast
  • 12 oz frozen sliced peppers and onions
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp mesquite Liquid Smoke
  • 2 1/2 tsp salt
  • 2 Tbs hot sauce
  • 10 oz can Rotel-style tomatoes
  • 14.5 oz can petite diced tomatoes
  • 1 qt fat-free chicken broth
  • 24 oz frozen cauliflower florets
  • 3 cups frozen diced/cut okra
  • 7 cups boiling water
  • 3 Tbs virgin coconut oil
  • 4 Tbs unflavored gelatin powder (optional)

Preparation

Step 1

Brown meat in a large soup pot; add peppers, onions, all seasonings plus salt and hot sauce; saute until veggies defrost and begin to tenderize.
Add tomatoes and broth, then let simmer.
In blender, puree frozen cauliflower with 3 cups boiling wate3r until completely smooth. Add puree to pot. Next puree frozen okra with 4 cups boiling water, gelatin powder and coconut oil until completely smooth.
Add to pot. Simmer at least 10 minutes.
Makes 12-14 (1 1/2 cups-2 cups each) servings
