Broiled Tomato-Pesto Sandwiches

Ingredients

  • 1 1/2 cups packed fresh basil leaves, rinsed and drained
  • 1 1/2 tablespoons freshly grated Parmesan cheese
  • 1 1/2 tablespoons olive oil
  • 1 clove garlic, pressed
  • 3 tablespoons low fat plain yogurt
  • Black pepper, to taste
  • 4 English muffins, split
  • 1 large tomato, thinly sliced

Preparation

Step 1

Preheat oven broiler. In a blender or food processor, combine basil leaves, cheese, oil and garlic; process until well blended. Add yogurt and process until smooth. Season with pepper and set aside. Place English muffins on a baking sheet, cut side up; broil until lightly toasted, 1 to 2 minutes. Spread each half with reserved basil mixture and top with a few slices of tomato; season with pepper and broil until hot, 1 to 2 minutes.

SERVING SUGGESTION: A big spinach salad tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Use gluten free English muffins.
