Ingredients

  • 1 pound lean ground turkey
  • 1/4 cup cornmeal
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 3/4 cups chunky tomato sauce, divided
  • 1 1/2 teaspoons chili powder
  • Non-aerosol cooking spray
  • 1 tablespoon brown sugar
  • 1 tablespoon chopped parsley
  • 1/4 teaspoon garlic powder

Preparation

Step 1

Preheat oven to 350 degrees. In a large bowl, combine turkey, cornmeal, onion, bell pepper, 1/4 cup of tomato sauce and chili powder; pat mixture into an 8- x 8-inch baking dish coated with cooking spray. In a medium bowl, combine remaining tomato sauce, brown sugar, chopped parsley and garlic powder; pour mixture over meat loaf; bake for 50 to 55 minutes. Remove meat loaf from oven and allow it to sit for 5 minutes before serving.

SERVING SUGGESTION: Steamed new potatoes and steamed cauliflower and broccoli florets with baby carrots.
GLUTEN FREE: Make sure cornmeal and tomato sauce are gluten free.
