Wild Rice Soup

Ingredients

  • 1 medium size onion, dice very fine
  • 3-4 carrots chopped very fine
  • 3-4 stalks celery, chopped very fine
  • 1 stick butter
  • 1 cup flour
  • 4 cups chicken broth
  • 4 cups heavy cream
  • 3 cups cooked wild rice (sometimes I only use 2)
  • 2 cups cooked ham, chopped small

Preparation

Step 1

In a large pot, melt the butter and add the onion. Saute until onions are tender. Add flour to make rueh. Stir rueh over med heat for 3 min. Add the chicken broth, carrots and celery. Cook until the vegetables are tender crisp. Season with Mrs. Dash, salt and pepper to taste. Add the cream and stir. Add in the ham and cooked rice and stir on low heat until it thickens.
Adding slivered almonds to this adds a nice flavor and fun crunch. And you can use chicken instead of ham if you prefer.
