Egg Rolls

Ingredients

  • 1 package Jimmy Dean sausage (I like the one with sage)
  • 2 bags of cole slaw mix
  • 3 Tb. fresh ginger, grated (you can use dried ginger is you don't have the fresh ginger
  • 3 Tb. fresh garlic, finely chopped
  • 1 Tb. black pepper
  • 1 tsp. salt
  • 1 package of egg roll wrappers
  • oil for frying
  • sweet and sour sauce for dipping

Preparation

Step 1

In a large skillet, cook the sausage until it is no longer pink. Remove from the heat; stir in the cole slaw mix, ginger, garlic, pepper and salt. Mix well. Transfer to a colander to drain. Cool for 15 minutes. Assemble egg rolls as directed on wrapper package, using about 1/3 cup of the sausage mix in each egg roll wrapper. Fry in hot oil until gold brown. Drain on paper towels. Serve with sweet and sour sauce, for dipping.
