Ingredients
- 2 tablespoons margarine
- 1 1/2 lbs. new potatoes, (10 to 12) quartered
- 1/2 cup leeks, sliced -- optional
- 1/4 cup red bell pepper, chopped
- 3 tablespoons grated parmesan cheese
Preparation
Step 1
Place margarine in 2-quart microwave safe casserole. Microwave on High for 30 to 45 seconds until melted. Add potatoes, leeks and red pepper; toss to coat. Cover tightly. Microwave on High for 6 to 8 minutes until potatoes are tender, stirring once halfway through cooking. Sprinkle with parmesan cheese.
